been looking at one aircraft since last Saturday and i am astonished at the journeys it has done since then.

We have some of this on the Apple versions of Plane Finder via the aircraft history icon.
Appreciate that doesn't give you all of the info that you are looking for.

Mileage is not an issue with aircraft. In a hold pattern for an airport for instance Heathrow, the aircraft may circle for say 30 mins at 200 mph,it's covered a hundred miles and 'gone' nowhere, but on a journey from say Australia , it's insignificant. Airframes & engines are 'serviced' on hours flown / number of landings, basis not miles. (See Great Circle distances)
The distances/flights aircraft do are decided because in airline thinking an aircraft on the ground is costing them money an aircraft in the air is earning money, so they try for the maximum utilization per (expensive) aircraft.
Unless you are on board the aircraft the arrival time is not really significant, especially over long distances because of the time differences. Most airlines nowadays tell you the arrival time will be (about 30 mins) later than they expect to arrive. If they have delays you are not too upset and if they arrive on THEIR scheduled time, you are happy because YOU are early.
